'Sark local' means all ingredients, wherever possible, are sourced within a 5-mile radius of the hotel, including the exclusive 3-mile territorial waters around the island.
Supplied by a dedicated team of local fishermen, farmers, and other suppliers - the Bistro's Sark food heroes - who grow or harvest only small quantities of fresh produce on a non-intensive and sustainable basis, the Bistro has been able to fill their menu with great quality, Sark-fresh produce for over 40 years.
The Bistro's market garden
Designed by owner Helen Magell, Stocks is also home to Sark's first-ever market garden. Based on the principles of permaculture, the oasis of superbly fresh, organic, local garden produce is only 250 metres from the back door of the kitchen and is managed by the hotel's gardener, James Ansell.
